The body needs nutrients like zinc and iron and wheat as well as rice is considered beneficial for it but with the use of pesticides, chemical fertilizers and hybrid seeds, elements like zinc and iron are gradually being destroyed.
Both of these food grains have increased in production but their nutrient content has declined rapidly. In Gujarat, wheat and rice are mostly used in food. At that time, the worrying situation for the Dalbhat and Rotli eating families of Gujarat is that these two food grains do not have the same elements as before.
Some agricultural scientists from Gujarat did research
Some agricultural scientists in Gujarat, in collaboration with the Indian Institute of Agricultural Research and Vidhanchandra Agricultural University in West Bengal, have found that these two foods have reduced nutrients like zinc and iron by 16 to 29 per cent.
According to the research, wheat has lost 29.42 per cent of zinc and 19.27 per cent of iron in the last 50 years. In rice, zinc has declined by 23.98 per cent and iron by 16.7 per cent. Sixteen varieties of rice and 18 varieties of wheat were tested from Gene Bank of National Rice Research Institute and Indian Wheat and Barley Research Institute. The seeds were grown and researched for two years with a shocking change.
The rice and wheat varieties grown in the 1960s as well as the varieties grown in 2018 were given adequate nutrients after collection. Analyzed after sowing and harvesting, the nutrients found in the crop from 1960 seeds were not found in the 2018 crop. Both crops have been found to be deficient in iron and zinc.

According to agricultural scientists, black wheat and rice are rich in vitamins and nutrients. Farmers of Central Gujarat cultivate both these crops. This variety is rich in zinc, iron and protein. It also works as a medicine for people with diabetes or high blood pressure due to high glucone levels. The prices of black wheat and rice are high but nutritious. According to the agriculture official, about 250 farmers are currently cultivating black wheat and rice in Gujarat.
